Pistachio Blueberry Yoghurt Bites

Quick & Easy Gluten Free

The perfect morning or grazing snack. Packed full of flavour, with just a little acidity to complement the coffee. And with the only sugar coming from the dried fruits, it's totally guilt free.

Pistachio Blueberry Yoghurt Bites
Ingredients

200g Pistachio nuts

50g Dessicated coconut

60g Dried blueberries

130g Dried apricots

2 tbsp Lemon juice

1½ tsp Lemon juice

¾ tsp Vanilla

Pinch Salt

16g Yoghurt Powder

12g Lemon Juice

Method

Step 1

Blend the dried fruits and remove from the machine.


Step 2

Add the chopped pistachio nuts, lemon zest, vanilla, salt and yoghurt powder.


Step 3

Mix really well then roll into 20g balls. Makes 12.
